No-Bake Mondays: Chocolate Fudge Cups

Love in a cup: no-bake chocolate fudge cups

It's like the cupcake of my dreams. This isn't the type of fudge with annoying sugar bits that crunch when you bite into it. No, this is smooth, creamy, hardcore melt-in-your-mouth chocolate fudge that sticks on the roof of your mouth. Ridiculously rich and made with no-nonsense chocolate, I suggest eating it in small portions or splitting it with a friend.

No-Bake Chocolate Fudge Cups
In Minutes 20 + 3 hours refrigeration
Makes About 6

395g can sweetened condensed milk
100g butter (about 4/5 butter stick)
200g Ghirardelli dark chocolate, broken into pieces (about 1 and a half baking bars)
cream cheese frosting (store bought or make it from scratch with this recipe)

1. Melt chocolate and butter in a pan on low heat (careful not to burn the chocolate!) The best way to melt chocolate is to put the chocolate pieces in a bowl, then put the bowl over a simmering pot of water. But this works too.
2. Add condensed milk and stir well.
3. Grease a muffin pan with butter or oil, and pour mixture in.
4. Spoon about a teaspoon of cream cheese frosting on top and use a barbecue stick or fork to make swirls.
5. Refrigerate for 3 hours. Enjoy!



Tips: I made the cream cheese frosting from scratch and ended up with a ton left. If you won't have any use for it, I suggest buying ready-made ones. Attention peanut butter lovers! Instead of cream cheese frosting, add a teaspoon of peanut butter instead and go nuts. 

Warning: these are dangerously chocloate-y.
