No-Bake Mondays: 5-Minute Chocolate Cake with White Chocolate Frosting


This came out of a microwave. Believe it!

Yes, chocolate cake in five minutes. No, I'm not kidding.

This five-minute chocolate cake recipe has been circling the web for quite a while now and I didn't believe it either until I tried it. You make it out of a mug (i know, how cool is that?), stick it in the microwave for three minutes, and ta-dah! Warm, personal-sized chocolate cake goodness whenever you need a quick pick-me-upper. You can find the original recipe here, but I made a few ("healthier," major emphasis on air quotes) changes below.

No-Bake 5-Minute Chocolate Cake with White Chocolate Frosting 
In Minutes 10 
Makes 3

Ingredients
4 tbsp cake flour
4 tbsp brown sugar
2 tbsp cocoa
1 egg
3 tbsp milk
3 tbsp olive oil
1/2 cup white chocolate chips
strawberries and walnuts to garnish

Procedure
1. In a mug, mix flour, sugar, and cocoa. Stir in egg. Mix well.
2. Stir in milk and olive oil.
3. Place the mug in a microwave. Set on high for three minutes. It will rise and look like it's going to explode but relax, it won't. Wait for it to settle back in the mug before taking it out.
4. Empty the mug into a chopping board and cut into three pieces.
5. Melt white chocolate chips in the microwave for about 30 seconds.
6. Spread melted white chocolate chips over the cake and top with sliced strawberry.
7. Voila! Enjoy. Best served warm.


 

Few tips: The strawberries make it pretty spectacular but I'm sure it will work with bananas, peaches or cherries. You can also substitute the white chocolate frosting with vanilla ice cream and go ala mode. Mmmmmm.
