No-Bake Mondays: Peanut Butter Hot Chocolate Shots


Peanut Butter Hot Chocolate Shots: get wasted on chocolate

Christmas is the only time of year I drink hot chocolate and this year I jazzed it up a bit. 

Cocoa obsession aside, hot chocolate has always been one of the more boring chocolate things to me (unless it's  ciocolatta calda from Italy in which case, I concede). See I'm not a big milk drinker and I like chocolate I can chew. This peanut butter hot chocolate shot is ridiculously rich, thick, and lovably lumpy. You'll get your chocolate fix in one sweet gulp--with a chewy surprise or two.

No-Bake Peanut Butter Hot Chocolate Shots
In minutes 15 
Makes 5 shots

Ingredients
1 cup milk
2 pieces Ghirardelli baking squares, unsweetened
1 tbsp creamy peanut butter
1/4 cup condensed milk 
marshmallows

Procedure
1. Heat milk in a pot. Melt baking squares and stir in. 
2, Add peanut butter and stir until melted (I like mine lumpy so I didn't melt it all the way). Add condensed milk and mix well.  
3. Top with marshmallows. I threw in an m&m (just cause) and shredded asiago cheese in there but that's just me!

crazy about carrot cake



I went from "eww, carrot cake" to "oh my god, carrot cake!!" because of Serendipity 3.

Of course there was a wait, as there has been one the last eight years. The place was tiny and a little cramped ("cozy" is pushing it), and nowhere near as romantic as it looked in the movie. Most tables had an order of their "famous" (major emphasis on the air quotes) Frozen Hot Chocolate, which I'm still convinced is a pimped out version of Swiss Miss. But the carrot cake was a different story.

So on the menu it was called Celestial Carrot Cake, and that's either a reference to the price ($8/slice) or how it's so good it sends you to the moon. Insanely moist and with a generous serving of whipped cream and walnuts, the texture was soft, chewy, perfect. Whipped cream was slightly overkill for me so instead I attacked the cream cheese icing it was smothered with. About three or four bites into it, I was a convert.
